Bulles de Comptoir #13 "Cuisine du Dimanche" opens with a pale colour and fine bubbles. The nose combines red berries, crisp apple and citrus fruits, then is enriched with juicy pear, white fruits and a toasted nuance. On the palate, the attack is lively, with mineral tension providing momentum and salinity enhancing the freshness. The texture remains light but clean. The finish evokes candied citrus, wet stone and a touch of brioche, resulting in a frank, vibrant and welcoming champagne...
The wine is a blend of 60% Pinot Noir, 30% Chardonnay and 10% Pinot Blanc, with grapes sourced from the Côte des Bar vineyard in the Arce Valley. The blend combines 65% of the 2022 harvest with a perpetual reserve, which brings depth, continuity and complexity.
The vinification process follows a traditional approach: gentle pressing, spontaneous fermentation with indigenous yeasts, then ageing partly in old barrels or casks, without filtration or fining, to preserve the purity of the fruit and the expression of the terroir. After bottling in February 2024, disgorging was carried out in May 2025, with an Extra Brut dosage, to restore the wine's original energy without excess sugar.
