Produced in the vineyards of the Montagne de Reims, mainly around Écueil and Sacy, the Le Coq Tome I cuvée blends approximately 56% Pinot Noir, 22% Pinot Meunier and 22% Chardonnay. The soils are mainly sandy, which brings finesse, liveliness and a marked minerality. Vinification takes place in small oak barrels using a gravity-fed method without pumping, racking, topping up or filtration, in order to preserve the purity of the fruit.
The wine is aged in barrels during fermentation, then in bottles on lees for around 24 months. Disgorging took place on 25 November 2024 with a very light dosage of 3 g/L. The limited production of around 4,620 bottles underlines the confidential and artisanal nature of this cuvée.
