A champagne of great purity and elegance, this wine first expresses delicate aromas of ripe yellow apple, fresh pear and light brioche, before a salty and slightly lemony tension appears on the finish. Le Renard is a pure Pinot Noir from the Les Croix plot in Écueil, a Premier Cru terroir planted in 1959 on compact brown sandy soil. The wine is produced using traditional methods, with manual harvesting, traditional pressing and gravity-fed must flow. Fermentation takes place in small oak barrels, without racking or filtration, using indigenous yeasts and very little sulphur. Ageing in barrels lasts around ten to twelve months and is accompanied by frequent stirring to bring texture and body.
After bottling according to the lunar calendar, the wine undergoes natural fermentation and then rests for around two years on slats. Disgorging is carried out by hand and the cuvée is offered as Brut Nature, to preserve the purest expression of Pinot Noir and the unique terroir of Écueil.
