This rosé comes entirely from Philipp Grob's Pinot Noir, the grape that anchors nearly everything he makes across his three vineyard sites in St. Gallen. Rather than macerating on the skins as he does for his reds, Grob presses the grapes gently to draw out just enough colour and fruit for a delicate pink hue, then lets the wine finish its fermentation directly in bottle using the traditional pétillant naturel method.

As with the rest of his range, nothing is added along the way. Spontaneous fermentation, no fining, no filtration, no dosage, no added sulphur. The natural carbonic gas produced during that final stretch of fermentation stays trapped in the bottle, giving the wine its gentle, slightly rustic fizz.

The result sits somewhere between Grob's more classic reds and his most experimental cuvées, a wine built to open horizons for the curious while still pleasing seasoned natural wine drinkers. Light, dry and only 10% alcohol, it captures Pinot Noir's fruit and freshness in its most immediate, joyful form.
