Lovely experimental stuff done with 100% Malbec grapes, picked one month earlier than the average “proper” maturities.
Hand picking and manually de-stemming, fermentations in stainless steel tank for 3 weeks, then aged in stainless steel and dames-jeannes. Bottled by gravity in July 2025 in a Saint-Émilion old limestone quarry.
