1,000L of Syrah and 200L of Viognier, both grown by Thierry de Marne (Domaine de Ventajou), Minervois. 20 year old vines on sandy-limestone soils; organic certified AB.

The name: "double pedal” (as in a double bass drum pedal) but spelled kool."
1,480 bottles and 10 magnums produced, bottled in June 2024.
