Weissherbst is a traditional format in the German-speaking wine world, a rosé made entirely from a single red variety. Here it is 100% Pinot Noir from Christof's own parcel at the lieu-dit Im Silser in Jenins, produced by saignée, juice bled from the red wine fermentation tank early on, before significant extraction, and vinified separately. The wine then sees a brief passage in wood before bottling, adding just enough structure to anchor the fruit without losing any freshness.
With the generous 2018 harvest Christof launched this Weissherbst, a rosé de saignée from Pinot Noir that many winemakers in the region neglect and that Ruof decided to enhance instead, the result is splendid. It has become one of the most expressive wines in his range precisely because the saignée method concentrates what makes Bündner Herrschaft Pinot special, the cool alpine air, the clay soils, the precision, without the weight of a red. The wine offers crisp acidity and flavours of strawberry and red berries, light and refreshing, aligned with his natural winemaking approach.
It also shares its base with the Pet Nat, which is bottled straight from the same saignée before fermentation is complete. The Weissherbst takes the still, more composed route, same Pinot, same plot, same hands, different destination. A wine to pour freely, slightly cool, for anyone who wants something with personality and without pretension.
