Baptiste Ramboz is a low-key yet influential figure on the Jura wine scene. His wines, which are sometimes free from the constraints of appellation rules, allow the terroir and grape variety to express themselves fully. The Rotsah is a Pinot Gris rosé, an unusual choice as this grape variety is usually vinified as a white wine. Here, the short maceration on the skins gives it a pale coppery colour with salmon-pink highlights, characteristic of macerated rosés.
The nose is subtle, with notes of white peach, redcurrant, apricot and a slight mineral note. The palate is dry and light, with lovely liveliness and a salty, lingering finish. A rosé with character, better suited to a meal than as an aperitif, which will happily accompany fresh starters, fish, grilled vegetables or a traditional regional meal...
