Grillo grapes from the Val di Bella Cooperative in Sicily, sourced from 25-year-old vines planted on clay-limestone soils and harvested in the first ten days of September. Seventy percent of the batch goes through direct whole-cluster pressing, while the remaining thirty percent sits in maceration for five days before pressing. The combined juice then undergoes spontaneous fermentation in stainless steel at uncontrolled temperature. From October 2024 through the end of April 2025, the wine remains in stainless steel tanks, unfiltered and with minimal sulfur intervention during racking.
The result expresses pronounced minerality supported by aromas of Sicilian Mediterranean scrub and citrus. The acidity is measured and pleasant, holding together a fresh and agile profile that feels both inviting and intriguing at once.
