This cuvée is a blend of 85% Pinot Noir and 15% Chardonnay from the 2020 harvest, sourced from plots located in the western part of the Marne Valley, around Chézy-sur-Marne. The vinification process is very artisanal and respectful, with fermentation beginning spontaneously with indigenous yeasts in 400-litre oak barrels for about a month, followed by 11 months of ageing on fine lees. After bottling, the wine is aged for more than 36 months on slats, without any dosage at bottling, as Brut Nature.
The approach to this wine aims for purity and direct expression of the terroir. No superfluous additions or dosage alter the nature of the grape or the identity of the lieu-dit. Production is very limited, further reinforcing the exclusive and artisanal character of this cuvée.
