Vinified with artisanal care—12 months in oak barrels without added sugars or fining, followed by 42 months of lees ageing—Éocène reveals a bright, refined perlage and a complex aromatic profile of citrus, white flowers, and wet stone, evolving over time into notes of dried fruit, fine spices, and chalky minerality.
