This cuvée is a blend of 70% Pinot Noir and 30% Chardonnay, mostly from old vines around 60 years old located around Chézy-sur-Marne, in the Marne Valley, on shallow, well-drained limestone soil.
Fermentation begins with indigenous yeasts and lasts about a month in 400-litre barrels. Ageing continues in barrels, then the wine undergoes secondary fermentation to produce a "Brut Nature" champagne with no dosage. Production is very limited, at only a few thousand bottles, which underlines the artisanal and confidential nature of the cuvée.
