For Gamay, whole bunches. Fermentation in a truncated wooden vat. Native yeasts, no-input vinification. Gentle extraction, light pumping over and punching down.
For Aligoté, long pressing, whole bunches. Native yeasts, no-input vinification. Light static cold settling.
Racking and blending during fermentation. Total maceration of 2 to 3 weeks. Several wines are placed in Burgundy barrels. Aged for 12 to 18 months.
