Pedres Blanques was founded in 2017 by Japanese winemaking couple Rié Shoji and Hirofumi Shoji. Both trained in oenology in Burgundy, Rié notably at prestigious estates such as Jacques-Frédéric Mugnier, and Hirofumi at Domaine de Chassorney alongside Fred Cossard, before deciding to create their own joint project.
Their vineyard covers approximately 3.5 hectares, planted mainly with Grenache, on steep slopes of schist and granite in the hills above Collioure, at an altitude of 250-350 metres, facing the Mediterranean Sea. They cultivate organically, working systematically by hand, as the steep slope prevents mechanisation, and avoid chemical treatments and even the use of copper thanks to the dry, windy climate.
In the winery, their philosophy is minimalist and respectful of the grapes: whole harvests, indigenous yeasts, fermentation without pumping over or punching down, without filtration or fining... The wine is aged in old casks or barrels to preserve the pure expression of the terroir. The result? A unique wine, rooted in the rocky landscape of Collioure, faithful to the nature of Grenache and the sincerity of a passionate couple, combining finesse, minerality, marine salinity and Mediterranean elegance.
