"Inspired by some old Brabant tradition, this beer was brewed with barley malt, raw wheat and aged hops. It was turbid mashed, coolshipped, spontaneously fermented and aged in oak barrels. This batch is a blend of barrels aged two, three and four years."
Set in a modest barn in Kortenaken, Flanders, Antidoot is the brainchild of Tom and Wim Jacobs. Since 2018 they’ve been crafting beers, ciders and natural wines, often blended together, using only wild yeast and bacteria captured from their surroundings, a true artisan fermentation lab. Their orchard with old apple trees, vines mixed with herbs and plants, feeds unpredictable bottles: sometimes fruity, sometimes complex, always curious and alive.
Antidoot combines do-it-yourself spirit, raw nature and hands-on craftsmanship to offer honest, off-grid drinks, perfect “antidotes” to conformity.
Kortenaken, a small village about an hour's drive from Brussels. It is there, in a barn next to the family house, that Tom Jacobs, together with his brother Wim, makes ciders, beers, wines and all kinds of blends of one with the other in his "fermentation house".
