Irreducible Gallic, Sébastien Riffault is one of the rare 100% natural producers in the Sancerre region. Since the early 2000s, he has been working on the 12 hectares of the family estate, following in the footsteps of his father Etienne, and has converted the vines to organic and biodynamic farming. Their lands of Sury-en-Vaux are full of plants, flowers and a rich biodiversity. The soils are worked with horses, the grapes are harvested late and the wines are gently aged in old, large barrels.
