His traineeship with Patrick Meyer in Alsace convinced him of the biodynamics.
His vineyards are located around the village of Volvic. Controlled grass sowing, partly animal traction, biodynamic treatment and the willingness to find an expression on each parcel which represents a terroir and different exposition. Granite, lava flow, basalt, sands… .
The first vintage was called “Fusion”, an assembly of Gamay nicknamed “Auvergne” and a Gamy nicknamed “Beaujolais” and two types of winemaking.
A second vintage is named Rockaille Billy… Pure Gamy, pure juice… winemaking in carbonic maceration.
Bullette in his head, tribute to his favourite band. Race Against The Machine and the title “Bullet in the head”… .Sparkling, zero dosage and no removal of the crown cap… . No sulfites added his wines.
