The grapes are grown in the Yonne region, in the commune of Saint-Bris, where the vines are planted at an altitude of between 210 and 250 m.
The plots face East, South and South-West. The soils are Kimmeridgian clay-limestone.
The grapes are hand-picked, whole-cluster pressed in a long, gentle cycle. Vinification and ageing for 18 months in stainless-steel vats, with no additives.
