Beautiful parcel of Bonnes Blanches, located on the left bank of the Layon, two hectares on a north-east facing terrace that yields fabulous, very complex grapes every year. Soil of silts with small round white pebbles called "Bonnes Blanches" on a schist outcrop.

Direct pressing, 36 hours of settling. Beginning of spontaneous fermentation in vats thanks to indigenous yeasts, then entonnage for the end of fermentation and aging on lees for 10 months without stirring. Wine not filtered.
